We tasted 6 Georgia White Wines made in the traditional manner which uses large handmade clay jars or kvevri, berried under the soil. These clay jars, allow the crushed grape to develop its flavours naturally through micro-oxygenation.
We all agreed that we can say we have never taste anything like this for good. Rich, smooth, full-bodied, and there is no acidity, or more to alkaline, but yet you do not taste any bitterness in your mouth. Its pity we can not purchase any of these in Japan.
